Vicenza-style salt cod
Ingredients for 5/6 dishes:
- 1 tin (800 g) of Vicenza-style salt cod (COD. 07001),
- 2/3 anchovy fillets Ginos (COD. 05006),
- 400 g white onion (2),
- Extra virgin olive oil (COD. 02201),
- Parsley.
- In a low and wide pan put a drop of oil e.v.o. with 2/3 anchovy fillets, add 400g of chopped white onion.
- Brown for a few minutes.
- Add a can of 800g Ginos salt cod and heat for 10 minutes taking care to stir the dish gently.
- Sprinkle with chopped parsley and finish the dish with a drop of extra virgin olive oil.
- Serve with steaming polenta or slices of toasted polenta.
